V60: 20 grams of number 7/Medium coffee grind. Bloom for 30 seconds, at 40 grams of 195 degree water. Fill to 360 grams in 50g to 100g increments. For the sake of consistency of taste, process may take up to 3 minutes, but no longer

ABOUT THE FARM

FINCA Timana

 ​​High quality Arabica gourmet coffee grown in the mountains of Colombia in the middle of the Coffee Triangle. The high elevation, volcanic soil, and perfect weather conditions help create an ideal terrain to grow delicious coffee. Adding dedication, hard work, an attention to detail the results are something very special.


Our Story
Tim Cummings, a Tempe, Arizona native, decided to move to Colombia with his wife, Ana Monsalve, after years of visiting her hometown Santa Rosa de Cabal. Since they were not independently wealthy we had to figure out a way to make a living while living in Colombia that they would both enjoy, and do together. Since they are big into organic living, gardening, and nature, they decided in 2016 to sell everything they own, buy a coffee farm, and work it themselves. They work with Javier, who is a more knowledgeable worker Tim and Ana have ever met, at any level. What he is able to accomplish daily still amazes them, and they know this dream of theirs would be impossible without Javier, his wife Soreida, and son Diego.

Since single-estate coffee is easy to trace, it naturally has distinct tastes and flavors because of the specific growing and processing conditions on that particular farm. Also, the flavor of coffee depends on many important factors like soil, climate, cultivation settings, shade, plant variety, altitude, and processing method. Single farm coffee gives you a good idea on how consistent the taste will be as we are in control of every step of the process. Thanks to our farm manager, Javier, born an raised very close to the farm, his lifetime of experience growing an managing coffee farms, and our extreme dedication to quality control, the resulting coffee is consistently delicious, and will only improve with age. ​​

The farm, sitting at 5,410 feet/1,600 meters, with two-thirds of the border being a natural river, flowing from the volcanic region of Nevada Del Ruiz, which is still active and only 30 miles away, gives the benefits of rich volcanic soil that our plants absolutely love.

We produce our coffee without the use of pesticides or herbicides because we believe in an organic lifestyle for us and all our plants. We compost everything and produce very little waste per month and we only use natural spring water here at the farm.

We are not absentee land owners who direct from afar: we live and work in Colombia on our farm each day trying to make our dream come true. Very hard work indeed, but a true labor of love.
