The bright and sweet taste of sugarcane is met with the simple nuances of chocolate notes in this high elevation, meticulously hand-sorted Castillo coffee. Tim and Ana, founders and farmers, produce one of the cleanest and most defect-free coffees we have ever come across.

Our entire production team is ran by the Cortez family. Ron Cortez connects with coffee producers from around the world. His son, Patrick, roasts every batch of coffee. Best Colombian

Hands down the best Colombian coffee i have tried to date.... so balanced!

I bought two bags of coffee, and they were fresh and roasted at the same day I got them. Honestly, I don’t like new roast coffee that didn’t have a rest period, they’re full of gasses (carbon dioxide) that because of the roasting. It was difficult to dial in since its too frsh, also its too difficult to taste the notes of the coffee.
I didn’t want to give a bad or good review yet to be fair. If I’d buy coffee again, I’d get an old roast like 10-14 days after roasting will be a good time to pull great shots.

Great morning boost

I definitely enjoyed the Colombian Timana. It’s a great roast. It’s very smooth and tastes great as is or with a splash of cream. I love to use the Chemex with this roast.

Excellent flavor

First time trying a coffee that wasn’t dark roasted, and this has an excellent chocolate flavor. Will order again.
