Estos granos provienen de Café Ocampos, una familia cafetalera multigeneracional en Manizales, Colombia. A lo largo de los años de negocio, Edwardo y su madre se han convertido en una operación de cinco granjas con prácticas excepcionales de cultivo, procesamiento y desarrollo comunitario. Su amplio conocimiento y aplicación les ha permitido ayudar a miles de pequeños agricultores locales a desarrollarse de manera sostenible.

La alta elevación de 5,780 pies y el rico suelo volcánico le dan a estos frijoles notas de sabor a fruta y flores delicadas. Sin embargo, la diferencia de sabor más destacada proviene del método de procesamiento NATURAL, dejando que los granos de café se sequen dentro de la fruta natural. Esto permite que los granos absorban los azúcares de la fruta, lo que le da a tu taza de café un sabor de cuerpo completo. Te gustará si prefieres el vino tinto.

A family-owned farm located in Manizales, Colombia. Edwardo and his Mother lead a five-farm operation that's been passed down through generations. Their approach to growing, processing, and community development is truly exceptional, and their knowledge has helped countless local farmers develop sustainably over the years.

When our green expert, Liz, first visited Cafe Ocampos, she knew she had stumbled upon something truly special. The farm's dedication to their craft and attention to detail are evident in the quality of their beans. It's truly some of the best Colombian coffee we've tried in our 30 years of in the industry.

The Natural Anaerobic Process

The journey begins with hand-harvested coffee beans, which are then subjected to a rigorous selection process led by local women. Using a water float test, only the ripest cherries are chosen to ensure the highest quality of coffee.

After selection, Cafe Ocampos ferments the coffee for 12-18 hours, depending on the weather, in tanks to develop its unique flavor profile. During this process, the bacteria and yeast present in the environment break down the natural sugars present in the coffee cherries, creating a unique and complex taste.

Following fermentation, the coffee is mechanically dried using low temperatures and resting periods to simulate day and night drying conditions. This stabilizes the water activity within the bean, allowing water to move from the inside to the outside of the bean and ensuring even roasting and a longer shelf life.

After 36 hours at 40 degrees Celsius, the coffee beans stabilize for 2 weeks to 1 month, allowing the flavors to fully develop. The beans then proceed to the dry mill for parchment and cherry skin removal. Guided by preselected quality standards, Cafe Ocampos' milling process is carried out with the utmost care and attention, ensuring that each bean is processed to perfection.
